How to make PROTEIN BARS

INGREDIENTS

1 1/4 cups vanilla protein powder

200g dates (soaked in warm water, and then depitted)

6 tbsp peanut butter (or spread* of choice)

6–8 tbsp of leftover date water

+optional add in of 2 tbsp flax or hemp seeds

+optional drizzle of chocolate or spread on top

*Alternate spreads I have used successfully include Lotus Biscoff Spread (smooth) and Pana hazelnut choc spread. Other nut butters such as cashew butter, almond butter and hazelnut butter also work really well.

METHOD

  1. Soak dates in warm water for 5–10 minutes or until soft. Then depit the dates and transfer into a food processor. Make sure to keep the date water as you will need this later.
  2. Combine the protein powder, pitted dates, nut butter and optional flax/hemp seeds in a food processor.
  3. Add 6–8 tablespoons of date water to reach desired consistency. Add in 2 tbsp at a time and check the texture. Depending on your protein powder, nut butter and dates used you may need less or more water.
  4. Roll with a rolling pin to about 1 cm thickness, then cut into 18 bars.
  5. Melt chocolate or spread, then drizzle over the top.
  6. Let the bars cool in the fridge for an hour before serving, or put straight into the freezer where they can last up to a month.
