How to make PROTEIN BARS

INGREDIENTS
1 1/4 cups vanilla protein powder
200g dates (soaked in warm water, and then depitted)
6 tbsp peanut butter (or spread* of choice)
6–8 tbsp of leftover date water
+optional add in of 2 tbsp flax or hemp seeds
+optional drizzle of chocolate or spread on top
*Alternate spreads I have used successfully include Lotus Biscoff Spread (smooth) and Pana hazelnut choc spread. Other nut butters such as cashew butter, almond butter and hazelnut butter also work really well.
METHOD
- Soak dates in warm water for 5–10 minutes or until soft. Then depit the dates and transfer into a food processor. Make sure to keep the date water as you will need this later.
- Combine the protein powder, pitted dates, nut butter and optional flax/hemp seeds in a food processor.
- Add 6–8 tablespoons of date water to reach desired consistency. Add in 2 tbsp at a time and check the texture. Depending on your protein powder, nut butter and dates used you may need less or more water.
- Roll with a rolling pin to about 1 cm thickness, then cut into 18 bars.
- Melt chocolate or spread, then drizzle over the top.
- Let the bars cool in the fridge for an hour before serving, or put straight into the freezer where they can last up to a month.
